Marble Cake (Gougelhopf Marbré)







Ingredients:

180 grams butter
160 grams sugar
3 eggs
1 tablespoon vanilla sugar or small pack of vanilla sugar(vanillé)
1 lemon zest
1 pinch of salt
300 grams flour
1 teaspoon of leavening powder
1 dl fresh milk (around)

for the chocolate dough:
25 grams cacao powder( ex. nestlé)
25 grams sugar
3tablespoon of milk

Directions:

Beat butter into mousse, add vanilla sugar,salt,and zest of one lemon ,then add sugar progressively, until it become soft and creamy.

Add egg one after the other,while beating each.

Mix the leavening powder and the flour. Strain the flour ,then add  to the mixture.Mix it well with a rubber spatule or with an electric beater.

Add milk slowly until you obtain the exact texture of the dough.(means not compact and not liquid).Mix it well to have a creamy mixture.

Remove 2/3 out of the mixture. Mix and dissolve chocolate powder and sugar in few tablespoon of fresh milk.Incorporate this chocolate to this 2/3 mixture.

Pour the 2 mixture in the gougelhoupf molder by alternating each other. Then pass a knife in the middle for 2 to 3 times to create a marble design inside.

Preably buttered the molder and add a bit flour to prevent the cake from sticking.

Bake 40 to 45 minutes at 160-170°C
