Ingredients:
for the dough…
500 grams flour
200 grams sugar
250 grams butter
2-3 vanillia sugar flavor
3 pinch of salt
zest of 2 lemon
2 big or 3 small eggs
for filling:
2 bottles of raspberry jelly or fig jelly or any kind of fruit jelly
Directions:
Strain the flour with a strainer. Put the flour in a big recipient. Add salt, sugar,vanillia sugar flavor,and the zest of fresh lemons. Mix them all together with your hand.
Cut butter into small cubes and add this to the flour. Mix them all together with your finger,until butter is all absorbed by the flour. or until you obtain a sand-like texture.
Beat eggs for few minutes .Add eggs to the center of your flour.mix carefully ,quickly and form it to round. Don’t knead the dough.Let it rest for a night in a cool place( ex.refrigerator).
Roll the dough ,to have 2mm thickness ,add a bit of flour in your working area,where you roll the dough to prevent from sticking.
Use a tin , as shown in the picture above ,to obtain the form of your biscuits.Then, for the center hole use a cover of a softdrinks bottle .
Put a pastry paper in the pastry baking plate..then aligne your biscuits one after the other with 1cm distance from each other.
Cook or bake at 180-190°C for 10-12 minutes..prewarm oven.
When cooked ,cool it down a bit, . then, fill one biscuit with jelly and cover it with another biscuit which has a hole.on the top.
