Bagel






ingredients:
for dough

500 grams flour
3dl water
1 teaspoon salt
2 tablespoon olive oil
1 teaspoon yeast
1tablespoon grain of white sesame

2 liters of water + 40 grams sodium bicarbonate ( for casserole cooking)

Directions:

Strain the flour and put it in a large recipient , add salt and oil.
Dissolve yeast in lukewarm water and when bubbles started to appear ,add yeast to the flour.
Warm water just a bit before adding to the flour. Mix all ingredients thoroughly.
Knead it well ,until it become soft and shiny. Let it stand for at least 1 hour to rise or more. until the volume of the dough double in size.

Knead the dough for the second time. Make it round ,then divide the dough into 6 equal parts.

Make round each part ,do a hole in the center, of about 4 cm in diameter.( insert 2 fingers in the middle of the dough to have the form of Bagel).

Boil 2 liters of water in a big casserole, add bicarbonate.When water started to boiled ,cook bagel one by one for about 3 minutes each. Depose Bagels in the pastry plate ,preably protected by pastry paper and sprinkled with corn flour (this helps to absorb excess water).Put  grain of sesame on the top of each bagel.

Cook Bagel at 220°C  for about 30-35 minutes  (pre-warm the oven before cooking)
