Cheese Gougère...Pâte a choux au fromage
ingredients:
1.5 dl water
2 gram salt
4 gram sugar
50 grams butter
100 grams flour
2 to 2 1/2 eggs
100 to 150 grams Grated Gruyère cheese
Directions:
Warm water,but not boiled. Add salt,sugar and butter ,let butter melt, mix.
Strain the flour .Add all flour at one time. Mix it vigorously with wood spatule.
Remove from heat and continue mixing. Add egg one by one while mixing each before adding the other one.Mix it vigorously until you obtain shiny sticky dough.
tip: If the consistency is a bit liquide, put it back to a very low heat for at least 2-3 minutes and mix as much as you can with your spatule.Remove from heat.Continue mixing.
Add Gruyère cheese in it.Mix.
Prepare your baking plate.put a pastry paper for protection. Use 2 teaspoon to make round form.
Align each round ,on the pastry paper with 2 cm distance from each other.
Prewarm oven at 220°C. Bake for 25 to 30 minutes at 200-220°C
open the door of the oven once in while ,while cooking (to remove air).
best for apperitif...
