Aubergine Torta ( revised)





for 3 to 4 persons
Ingredients:
6 Aubergine (long form)
3 eggs
150 grams ground padano cheese
Olive oil
 few drops of fish sauce (patis) ,ground black pepper ,salt to taste
Directions:
Wash the eggplant or aubergine.Pinch the eggplant with a barbecue stick to make tiny holes.Pre-warm the oven at 220°C.Bake eggplant for 10-15 minutes or more ‘till cook.
Peel the eggplant, flattened the fleast  by using a fork. Beat the eggs to have an omelette ,add salt,black pepper and fish sauce.Mix thoroughly.
Dip completely the flattened grilled eggplant to the omelette. Remove,then, dip it to the parmesan cheese. Press it a bit to let the cheese adhere.
Put a bit of olive oil in a non-sticking pan.Let it warm, and fry the eggplant few minutes from one side to another ,Until it takes a nice golden color.
