Madeleines
Ingredients:
200 grams flour
200 grams butter
120 grams white sugar
1 tablespoonful honey liquid
5 eggs
1 small pack of vanilla sugar (1 teaspoon)
1 small pack baking powder (10 grams)
1 zest of lemon
a pinch of salt
Directions:
Break eggs and put it in a big recipient, add sugar,vanilla sugar,salt, and honey. Beat for few minutes not more.
Strain flour, add and mix the leavening powder in it.
Add flour to the mixture, mix it well until homogenous mixture is obtain.
Melt butter by using a steam bath method (bain-marie).
Then, pour melted butter to the mixture, mix well all ingredients together until shiny homogenous liquid dough is obtain.
Put about 1 tablespoonful of liquid dough or more to each madeliene molder or any molder for muffins.
Bake at 170-180°C for about 14-16 minutes
tip: Buttered your molder and sprinkle a bit of flour to facilitate the remolding of madeleines after baking.
