Heart Ginger Bread (coeurs de pain d'épices)





Ingredients:
300 grams semi-white flour
3 teaspoon baking powder
2 teaspoon of spice powder for Ginger bread ( épices pour pain d'épices sold in the market) or you can make your own spice mixture(cinnamon  powder,ginger powder,clove powder)

1 tablespoon of unsweetened chocolate powder
lemon zeste (peel scrape) of one lemon
1 pinch of salt
100 grams of brown crystalline sugar (cassonade) or central sugar
140 grams honey (acacia or all flower honey)
6-8 tablespoon of fresh milk

Instructions:

Sift the flour with baking powder in a big recipient, add the spice for ginger bread, chocolate powder ,lemon zest, and sugar.

Mix them all together with your hand. Add honey and milk ,mix everything and knead it well until you obtain a non-sticky dough.Form the dough into round, cover with plastic and set it aside in the refrigerator or in a cool room for a night (12 hours).

The next day, roll the dough up to 5mm thickness. and cut it by using a heart shape molder for biscuits ,as shown in the photo above.Depose the heart-shape biscuits in a pastry paper (sulfurise paper) one after the other and so on.

Brush the topping with fresh milk 2-3x. Let it stand 5 minutes before baking, to let the milk just dry a bit.



Bake at 175°C for about 10-12 minutes
